Concealed within the grand interior of the Hotel Metropole is famous restaurant “L’Alban Chambon”, a food lover’s must in Brussels. Seasonal Menus

 

For more than 25 years executive chef Dominique Michou has been devising seasonal menus offering a wide range of his specialties based around meat, fish, shellfish, foie gras, game and lobster.

 

The philosophy behind the continually evolving menu takes you back to basics with seasonally chosen produce and simple ingredients. The sommelier is always at customers’ disposal to make the perfect choice from 250 different wines and over 4000 bottles in the wine cellar. L’Alban Chambon is open from Tuesday to Friday from 12am to 1:30pm for lunch and from 7pm to 9.30pm for dinner, on Saturday it is open from 7pm to 9:30pm It is closed Sundays, Mondays, Saturday lunchtime and public holidays.

Elegant, Refined & Relaxed

To start or follow your dining experience, the bar “Le 31” offers an elegant, refined and relaxing atmosphere from within a stylish art deco interior, serving a large selection of cocktails and fine aged whiskies. Here you can witness the Hotel Metropole’s history, where a recent refurbishment uncovered a number of early 20th century ceiling frescoes. The bar is open Monday to Saturday 10am to 2am and 3pm to 11pm Sundays and public holidays; live piano music features from 6pm to 9pm Tuesday to Saturday.
