Diverse Influences

The 150 cover restaurant includes a separate sushi bar and the minimalist, chic interior boasts stunning view across Hyde Park through full height windows. Designed by United Designers the interiors make subtle use of light woods and natural stone to reflect the diverse influences of Nobu’s cuisine, incorporating the purity and quality materials inherent of traditional Japanese design.

"New Style"

The menu at Nobu London captures Matsuhisa’s ‘new style’ Japanese cuisine, where traditional Japanese techniques meet South American flavours. This cuisine has become his trademark and the foundation of his worldwide success. Signature dishes include Yellowtail Sashimi with Jalapeno, Tuna Sashimi Salad with Matsuhisa Dressing, the sizzling Beef Toban Yaki and the famous Black Cod in Miso. Nobu London was awarded one Michelin Star in 1998, one year after opening, which it still retains today.

Nobuyuki Matsuhisa – known to the world simply as ‘Nobu’ – is the acclaimed and highly influential chef proprietor of Nobu and Matsuhisa restaurants all over the globe. After graduating from high school, Nobu found a live-in job at a sushi restaurant in Tokyo called Matsuei. When he was 24 years old, Nobu accepted an offer from one of his customers that took him to Lima, Peru to open a restaurant.

 

The impact of his time in Peru cannot be overstated. Nobu began weaving Peruvian influences into his dishes – the beginnings of his signature style. After a brief stint in Buenos Aires, Argentina, Nobu returned to Japan. Upon returning to Japan, he had an opportunity to open a restaurant in Alaska, which he took. In 1987, Nobu opened his first restaurant Matsuhisa in Beverly Hills. Matsuhisa was an instant success and became a magnet for food lovers and celebrities alike.

 

It was here that his longtime friendship and business relationship with Robert De Niro began. It was at De Niro’s urging that they opened Nobu in New York City in 1994 with restaurateur Drew Nieporent. Nobu resides in Beverly Hills with his wife while his two grown daughters now live in Tokyo. He travels the globe, visiting all of his restaurants and scouting new locations to conquer.

Mark Edwards has always had a keen interest in food, commencing his chef’s career at age 13 when he took a part time job in a small seafood restaurant near his home in Kent. As well as overseeing the kitchens for both of the London restaurants, Mark is now executive chef for the Nobu group and works with Nobu to set up the kitchen operations for new and forthcoming projects.
